Fried Tuna Salad

This is a quick and easy lunch!

1 can of tuna ( I use Starkist chunk light in water)
1/4 c. chicken Stovetop stuffing 
1 heaping spoonfull of sweet relish
2 tbsp. shredded cheese (mild cheddar is my choice)
1 tbsp. of mayo

Mix all ingredients together. Flatten in a skillet then fry at med-high heat turning tuna over in sections every couple minutes. Do this until tuna begins to slightly brown. Serve on it's own or between two slices of light toast.

Ideas for a side: pasta salad.

Cheesy Chicken and Zesty Tater Wedges For Two

You could easily adjust this to feed more than two!

2 boneless skinless chicken breast
2 potatoes skinned and cut into wedges
1/2 c. Italian dressing (I use Kroger brand Zesty)
1 c. shredded cheddar
1 tbsp grated parmesan

Preheat oven to 400. Place chicken in glass pie plate then spread potatoes all around. Pour Italian dressing over the top so that chicken and potatoes are coated. Sprinkle cheeses on top. Cover with foil and let bake for 35 minutes or until chicken is fully cooked. Remove foil and chicken and let potatoes cook another 25 minutes, more or less, until the potatoes are the consistency you like. I like mine soft on the inside and crispy on the outside so 25 extra seems to work good for us.
