I have a pound of ground beef. Now what? (Part One)

Do you stock up on pounds and pounds of ground beef when it is on sale with no real intentions of what to do with it? Do you feel like you are in a rut with always fixing either hamburgers or tacos? I've been there and I've come up with a few ideas.

Cheeseburger Pie
This always reminds me of a quiche except it's hamburger instead of spinach. I think everyone and their brother has their own Cheeseburger Pie recipe, but this is how I like mine. If you like some spice, you can add hot sauce on top like my husband does.
1 lb ground beef
1 heaping full cup of shredded cheddar
1 cup of milk. I use whole milk. It's not the healthiest but I like the richness it adds. 2% works well too.
1/2 cup of Bisquick or store brand baking mix. I prefer Kroger brand.
about 1/2 tsp of salt (more or less depending on your taste)
2 large eggs

Preheat to 400. Fry up the beef in skillet then drain. Pour it into a greased 9 inch pie plate.Sprinkle the cheese on top. Mix all the other ingredients together (a mix of whisking and using a fork seems to work best with the baking mix). It does take a lot of whisking to get the lumps out and you may not be able too 100%. That is okay. Pour the mix evenly over the meat and cheese but do not stir. Bake for 25-30 minutes or until a toothpick/knife comes out clean. Enjoy! It makes yummy leftovers!

Ideas for a side: a small garden salad

You can make a healthier version with ground turkey, skim, and low fat cheese but if its tasteless, don't blame me!

Check back as I have lots more ideas of what to do with a pound of ground beef.
